Sa...We just made an amazing chicken tortilla soup.<br /><br />Saute an onion, 2 celery, and 2 carrots in a little bit of oil. Add one jar of salsa. We used an HEB Garlic & Chipotle. You'll want something not chunky and sort of "fresh," if that makes sense, because it is the base of the soup. Reduce the salsa and veggies into a thick, paste-like consistency. Stir in some chicken broth (about 6 cups or so). Simmer for 25 minutes. Before simmering, I tossed in 4 raw chicken breasts, but you could also use leftover chicken or shread a rotisserie chicken from the store. When you're almost ready to serve, add a can of corn and a can of black beans. We toasted strips of corn tortillas in the oven to finish it off.
