Weekly Menu

Week of January 31:

Monday - Meatless Spaghetti, salad, garlic monkey bread
Tuesday - Homemade Chicken Nuggets, Cheesy Potatoes, Peas
Wednesday - Tacos, Jello w/ Fruit
Thursday - BLT, green beans
Friday - Pasta Primavera Alfredo
Saturday - Leftovers
Sunday - ??


Week of February 7:

Monday - Creamy Potato Soup
Tuesday - Turkey Pot Pie
Wednesday - Leftovers
Thursday - Beef and Vegetable Soup
Friday - ??
Saturday - ??
Sunday - ??

Any suggestions for the days that I don't have planned?!?  Pass them along.

Quesidillas are a cheap, easy, tasty meal we have from time to time - you can do them in the skillet like grilled cheese - corn(or flour) tortillas, chopped/shredded chicken or turkey, cheese and salsa. I'm not sure about Noah's tastes :-), but I sometimes add black beans or refried beans for added nutrients - then top with whatever you have on hand!

  2. We just made an amazing chicken tortilla soup.

    Saute an onion, 2 celery, and 2 carrots in a little bit of oil. Add one jar of salsa. We used an HEB Garlic & Chipotle. You'll want something not chunky and sort of "fresh," if that makes sense, because it is the base of the soup. Reduce the salsa and veggies into a thick, paste-like consistency. Stir in some chicken broth (about 6 cups or so). Simmer for 25 minutes. Before simmering, I tossed in 4 raw chicken breasts, but you could also use leftover chicken or shread a rotisserie chicken from the store. When you're almost ready to serve, add a can of corn and a can of black beans. We toasted strips of corn tortillas in the oven to finish it off. SOOOO good.
